electric skillet cooking and baking

I am bringing an electric skillet to our next camping trip. Does anyone have any great recipes for cooking or baking in an electric skillet. I have successfully baked cupcakes in it.

Our oven at home wasn't working for a while, so I used our electric turkey roaster for quite a few things. I made pizza in it two different ways. One, which would probably work well in your skillet, was using a box of pizza dough mix, in a pyrex pan. I also used 6" pizza crusts directly on the wire grill which is about a half inch above the bottom. We're going on a longer trip where we'll have hookups, so I think I'll bring it along.

Thanks for the info on cooking with the electric skillet. I am actually excited about cooking/baking in it. I will update on how it went when we get back from camping.

Here's my favorite skillet recipe:
Take one pound of bacon
Place in skillet
Flip occasionally
Remove and enjoy

Just got back from a family camping trip..been a long time since we've camped with Raccons...so we forgot to lock up the ice chest...
I did however have bread, potatoes and lunch meat in the camper fridge. After the coons stole our pork steaks, and bacon (only one pound...they left us the other two thank goodness) we had potatoes wrapped in foil and cooked in the covered skillet (much easier than dealing with charcoal since we were going to spend the next few hours hanging at the river) just put the potatoes in the skillet at 250% and headed to the Guadalupe...when we came in the potatoes were done and ready to eat. The next night we made sandwiches with Cibatta rolls meat, cheese, olive spread, onions wrapped in foil put in the skillet set at 200% flip after 10-15 min...leftovers were refrigerated and warmed for breakfast in the skillet..since the raccoons stole our last day's worth of bacon...then proceeded to crack open and eat all our eggs...gotta get back in the rabbit of raccoon prevention...

Thanks littlepck for the recipes. I actually cooked spag. in our electric skillet. I cooked the hamburger first, put it a side put boiled water in the elec. skillet put in the spag. let it boil, drained it, then added back in the hamburger and pasta sauce and it was almost the best spag. I had ever eaten. I also made cinn. rolls in it the next morn. I bought refrig. cinn rolls put the electric skillet on 225 turned them over half way and they came out great.
As far as raccoons we just got back from camping and was dealing with skunks and raccoons. Raccoons even though they still your food I am more weary of the skunks that can make u stinky for the rest of your camping trip.

Glad those skillet recipes worked out, sounds good to me.
Remember that skunks should be considered rabid according to our local animal control office.

Honestly we've never run into skunks..but i do know that raccoons can have rabies so having them raid my ice chest just made me want to go home an bleach the whole lot (leftover sodas and the ice chest's).

For our last morning of a recent trip to Anza Borrego, I wanted to make biscuits, eggs and bacon, but I did not want to fire up the oven in the camper or make a lot of pans to clean so I made the whole breakfast in my Coleman propane skillet.
I baked the biscuits on low with the lid on, then fried the bacon on medium and then turned it off and scrambled the eggs while it cooled. About 30 mins and only one pan to clean. A great breakfast for "get away" day.

I suppose that any animal that eats carion should be considered a rabies possibilty. I have been told also by our Animal Control that opossums are not rabid since they only eat grub and insects, not carion.
Like these cooking techniques on this thread.

I have a low cost Electric Skillet that is dedicated for camper use, and I use it a lot in both indoor and outdoor cooking. Not as big as the one in the house but it's always in the camper when I need it, which is usually quite often...

Glad to see so many responses about electric skillet cooking. Our electric skillet came in very handy for this last camping trip. We camped at Clifty Falls State Park and by now everyone knows that there is a burn ban just about everywhere. They CG even told us we could not use our coleman portable grill. So, we cooked with the electric skillet all week. I made chicken, hamburgers, and hot dogs in it. Not too exciting but I am glad I had it. It was such a different feel at CG with no fires going. Everyone was pretty much in their campers by dark. I just hope it rains soon.
If you have any more recipes please post! I am always looking for new ideas especially in the electric skillet.
