Consider the normal water temperatures where and when you'll be paddling before buying a sit on top kayak because you will get wet paddling.   Flowing water is typically cooler than still water.

Tandem kayaks are most difficult to paddle when both people are paddling.  If you buy a tandem make sure that you can paddle from the center of the boat when alone , to center your weight and level the boat out.

They do make some very paddle-able inflatables but they're pricey.  You need to be able to get enough air pressure to stiffen it up, a wally world vinyl kayak ain't gonna do it.

I would consider a sit on top tandem "real" kayak and not an inflatable. It will track better, they have storage in the bow and stern for ice chests, masks and snorkles and emergency gear, extra paddles and so forth. They are bomb proof and you will never worry about a whole in the yak.  You should be able to get seat backs for the Admiral so she can be more comfy than in an inflatable. Wilderness Systems and Perception both make nice sit on tops, give them another look and you wont regret it......
