I am thinking of hooking up a 120 volt water heater in my pop up to supply better half with hot water. Manufacturer of heater states that it needs a minimum of 25psi of water pressure to work. Any idea what kind of water pressure the 12 volt pump that comes standard in a pop up will produce?

12V water pumps produce about 45 psi, at least that's what the cutoff on ours is. You can adjust it to make it higher or lower but that's the average setting. You also need to look at another number; Flow. They produce different amounts of flow all the way from 1 gpm to about 6 gpm the most common being about 2.5 gpm. Ours is a 2.7 gpm. If you use a low flow shower head it's not a problem. If you turn on several faucets at once the pump can't keep up.
