For us the best camping next to water regularly is our local sportsman, camping a stones throw from a 15 acre pond with very few others to bother us. Some of our best camping near water in no particular order over the last couple of years.
Backbone State park, not on the water but nearby, one of IA's best state park
Pikes Peak state park, ability to look over the Mississippi, and I believe Wis River
Lake Red Rock state park
Jester County Park on Saylorville lake

My personal favorite lake-side campground is on the western end of Jean Lake in the Quetico, but that doesnt help you...
Ive never been to Red Rock, but the others pcfeld mentioned are at the top of my favorites list. However, none are really camping next to the water, they are "a few minutes walk to the water".
The "primitive" CG at Lake McBride SP (Johnston Co), Rock Creek SP (Poweshiek Co), Hannen Lake (Benton Co), Rodgers Park (Benton Co) and Otter Creek (Tama Co) all have sites that are just across the CG road from the lake.
There probably are some, but I dont know of any CGs that have sites right on the water.

If your plans have you going as far as Des Moines area I can suggest Jester County park northwest of Des Moines. I imagine this is for your trip to Mid con and I believe you planned on a two day stay which would allow you to visit Des Moines easily. This is on Saylorville lake which also has COE campgrounds but I haven't been to them.
Sorry this is the only park I have stayed at within 40 minutes of I-35 being from the eastern part of the state.

Blue lake near Onawa, IA. There is a KOA on one side of the lake and a state park on the other both with water front sites.

I would love to check that out! Is it a private group or can I search it?

it is searchable, you just have to ask to join. They mostly have TT but I have a PUP and there is at least one tent camper in the group.
